I'm always in the mood for something sweet and spicy! If you are like me, you are going to love this salad.
In this recipe I used regular Chinese noodles, but this salad is equally tasty with soba noodles or any other kind of long pasta.
So for the dressing:
1/2 of mango diced
3 tbsp sesame oil
1/4 cup of rice vinegar
1 tbsp of honey
2 tbsp of soy sauce
3 tbsp of lime juice
1 tbsp fresh ginger
pinch of red pepper flakes( or more to your taste)
For the salad
8 oz of Chinese noodles
1/2 mango cut into matchsticks
1 small cucumber cut into matchsticks
1/2 cup of radishes thinly sliced
1/2 cup of green apples thinly sliced *
Cilantro and additional lime juice to taste
Cook your noodles according to the instructions on the package. When it's done cooking, rinse it under cold water to stop the cooking process.
Put all the ingredients for the dressing in the food processor and blend till you get smooth consistency.
To assemble, simply combine noodles with other salad ingredients, put the dressing over and toss till it has coated everything! Chill in the fridge for couple of hours.
Psss....I can't wait for two hours!
